Hefe yeast give off more clove at the bottom end of their range. Banana at the upper threshold. Thanks for the advice Eric, the way I brew (three vessel system) is simple and I can adopt your advice. I always rehydrate dried yeast so will continue so. I can’t see you having a problem. I was using starsan which I think is very similar, in a blow off container for my fermentation vessel. At the end of fermentation I force cooled the beer which sucked some back into the bin. Beer was sound! Don’t worry.

Has the cost of your your CO2 supply shot up?

I’ve just been for a 5kg refill of CO2 and after around 16 months the price has almost doubled to £20.00!
Is anyone else finding the price shooting up, or am I being ripped off?

I may have to compromise on the dispense, as it will probably have to go in my keezer where I normally have a couple of English ales in there, I don’t like going below 10c with those.
