That's about right, though a bit extra wouldn't hurt. But apples aren't great on nutrients, so maybe chuck some in - I use good old diammonium phosphate, but if you prefer Trozonomyl or whatever, fine. Which yeast, by the way? Oh, there was a lot more than the removal of the chatroom. For one thing, the move from free to paid, half the pages being covered in ads, etc etc etc. And the Yank owner outright lied to many of us, mods and admin included, several times. I hope the CBA forum comes back, there's a lot of good data ...

Powdered tannin has a nasty tendency to clump. During fermentation, all the yeast action sorts that out. Might be trickier in a finished brew. Some very strong tea might work better

Sounds like not enough tannin and not enough acid, for sure. Probably too late to add tannin now but you might be able to mix some acid in.

I've not done a pure blackcurrant but I put around 4oz/gallon in every berry wine I do, seems to make everything more winelike. I have loads of raspberries but they don't give a great (or even much) flavour on their own so most of mine are about half rasp, then the featured berry, or mix of berries,...

Thanks for the responses. I understand from my research that micro brewing (anything less than 7 BBL) is pretty much a sink of time and money. Chap I know locally recently set up a 5BBL (I think - maybe 7) brewery with his severance money plus his mate's contribution. They're doing OK - prizes even...

I've never done a kit. I do "country wines" - parsnip, carrot, dandelion, nettle, etc. Some nice plum when a friend's tree went crazy... etc. Does the work make it more rewarding than a kit? Dunno. And they're different to grape wines, if I did a kit I'd always be thinking I could buy something chea...

Last spiced one I did refused to start fermenting, and I never worked out why but I worried about the spices somehow upsetting the yeast. So maybe put them in after the vigourous initial ferment has died down. Since the main flavour is going to be the aj and the spice, quality honey doesn't matter, ...

It's a lot of ginger!
Using cloudy juice, it's not going to clear, so you'll need to check if it's finished with a hydrometer, or just give it a good 12-14 days (assuming decent temperature and nutrient).
