Strange, Beersmith converts the 1.050 at 20C to 1.051 at 15.6C.
Are you reading the correct numbers on the hydro? Maybe ABV by mistake? (not that its ever happened to me)

1/2 a cup or less of sugar in the keg will do the trick. Make sure you seal the lid with a shot of CO2.
You will have a bit of sediment, but a few pints into the keg and you'll be fine.

Try a pound of honey. Not my preferred method, but others I know add to every batch.
When I want to up the abv I usually mash more grain, or if it's a monster then I'll add extract at the end of the boil.

Yes to both of those. Also, you may try a small square of cardboard or a thin coin under each lid foot.

I also split the batches. On top of what others said, it also makes it easy to swap batches with other brewers. Ones I trust of course.

I believe my cask breather will take up to 50psi and turn it into 1psi. Mine is usually set between 5-10 depending on what other kegs I have on CO2 pressure.
To save money, you may want to try a propane regulator from an old gas grill (or buy a new one). They are set at 1psi.
