I tend to ferment for around 10 days and always check the gravity before transfering. Most seem to finish around 1.012 give or take the odd point.

I use 20lt polypins. Most beers will I just leave for around 3 weeks and they beer will prime naturally as they condition. If the pin was not started to expand after 2 weeks I will add about 70gms of priming sugar.

I used this beer as my main yeast source for years. Unfortunately they changed it to a priming yeast quite a few years back but must admit not tried it for at least 10 years.

I know Adnams is duel strain and I believe one dominates if repitched after just a few generations how that applies to their mini kegs I don't know.

I would keep it to Pale malt, a bit of crystal, fuggles for hops and avoid SO2 like the plague.

I use this yeast a lot and would not worry the clumping is quite normal. I normally get a slight head at this stage. How old is the yeast and how long do you intend to keep on the stir plate

He left out the yeast on purpose as the yeast the brewers use is generally not available to the public. Brewlabs would supply specific yeasts but they have changed the way they trade recently so not sure if that is still an option. Personally if using liquid yeast I would go for any of the British s...
