Cheers. That does put my mind at rest over a few issues. Especially tannin extraction (for haze issues) and over fermentability.

Oh dear Dennis, I take it you don't have a false bottom/BIAB. Worth knowing that the mash compacts that much.

Overnight Mashing

Does anyone have any bad experiences of overnight mashing/long mashes?

Things usually quoted are a low fg, thin beer, no head, fizzyness and mash infections/sourness. Has anyone had problems first hand.

Also good to hear from those that use this. What are your timings, temperatures and method.

Touchstone, do you ever find you get a low fg, thin beer, no head, fizzyness, which are the common concerns?

Thats exactly what I was thinking.

I had high hopes for this until I read it is slow to sediment....

What is the ideal pH for the break? Or is it the range of the fall which encourages it?

Apparently, ferments down similar to the ratio of malt extract. That percentage of left behind unfermentable products must give some taste/body/mouthfeel.

Hopefully somebody will be along to say I am wrong.

I always thought it fermented down to near sugar levels.

Cheers Leeds! Just got this out of the secondary.... which was a good call for dry hopping with pellets. Lots of matter and yeast has dropped. 8 bottles and a conry packaged. Had a little sample, and pretty good, maybe great. BUT the bitterness doesn't lend its self to easy drinking. Hope a bit of c...

Two weeks in and I had a sniff. Hoppy, very hoppy. Hmmmm.....

What the hell in went 50g of dry hops. I predict hazes!

Dropped the temperature down to 17C.
