Went for 20g of Cascade (flower) at 60mins and 50g of Simcoe and 50g of Chinook pellets at 5 mins. I have a slack hand full left for dry hopping too. Ended up getting 22.5L at 1.040, but as I didn't want to alter the IBUs or colour I stayed away from liquoring back. Really difficult to get the wort ...

Interesting read Wales. With such a high proportion of crystal I was kind of hedging my bets on the thinning of the body not being an issue. However didn't think about the lactic side of things. Tasting it this morning it seemed fine. However have to wait for the finished beer to see if there is any...

Nothing to worry about time wise. Starters usually give the yeast a running start at a beer, so limited lag time. Also 007 is one of the more aggressive yeasts.

Yeah, I would think seriously about adding that much Lactose at the end of the boil, and would probably go low at the end of the boil, and add at the bottling stage to taste. (ensuring it is pasteurised before adding) That's the only thing that jumped out at me without inputting all the totals in to...

Hey, all.
Such a good day out that we have pretty much ripped it off and made our own version down in Essex. Just had our second year with additions of food and speakers.
If dates are firmed up on this I will try and pop up and enter and see a few familiar faces.

Are you sure it's not just a haze from the Rye and the hops (which I assume are in high quantities).
Sometimes this will also give that spicy flavour/aroma.....

......... Perhaps it would be worth deliberately under-pitching this yeast to get some more esters going? Do not underpitch to try and get some particular yeast character.....you risk the yeast over emphasising the particular character you are looking for and you also may get flavour compounds that...
