I use S04 prety much all the time for my ales. And more expensives slap packs for my continental style beers. For some reason with s04 the darker and lower final abv the better the head retention, especially on stout. Also the sediment is harder at lower abvs. I thought i would one day have a crack ...

Hmmm.... I think you don't fully understand the techniques. The mash is never (in my experience) done with the full volume of liquor. In fact as a really rough guideline about a half is used. If you use a third of the volume of liquor each batch this should work out fine! The wort is run off each ba...
