I've had some refractometer issues myself recently and have found the brewers friend site to be very useful. They also allow for a wort correction factor which can make a difference to the final reading. It's a bit of a faff to get it but if you want to get reliable results it's worth it. https://ww...

No offence Jim but that sounds horrible. Are you in prison by any chance? All joking aside, bread yeast isn't really intended for brewing. It will ferment but not in a way that you can rely on for consistent results. That's probably your main culprit but there are tons more things that could've gone...

DMS can add a seaweed flavour. I've tried to attach a pdf via tapatalk from the Univerity of Nottingham on controlling off flavours but not sure if it's allowed to go onto the forum. Ah, fair point. I use Mangrove Jacks bohemian lager and it's great but obviously not the same. James Morton's book is my bible though and he's never done me wrong so far (Although I'm aware there are a few misprints).
