If I didn't pump water from the water butts, I would just use mains water to do most of the cooling.

The maximum temperature you can pass through the Maxi is 40C, otherwise you can damage the chiller. You'll find that it's not very effective anyway, as the ice bath will quickly melt if you pass hot wort through the coil. I pump cold water from a water butt through my immersion coil. A Waddington & Duval tap is probably what you're looking for.

I'd wait, but if it's a strong IPA, then you might need to add some fresh yeast.

If you make a few "S" shaped hooks of differing lengths, you can hang the coil from the rim of your pot at the depth you want.

I've had the same sort of problem with a welding gas bottle to mig welder.
Wrapping PTFE tape around the end of the tubing can can help stop the leaks a bit.

A hair dryer will dry out any damp contacts, quite quickly.
