I wouldn't worry too much about cracking your fermenter a bit.

I just lift the lid a little and lower my probe into the beer ....Cant reach the bottom though
I think the plastic probes are better for immersing into beer. The stainless ones sometimes aren't.

Hmm. That sounds good enough for me. Which particular model do you use? See pictures attached. Note however that I run mine on air. Problem with the flowjets is that the maximum temperature they can officially handle is 49degC - too low for this application. The harshness does diappear in time...as long as you remove the hops form the cornie. If you leave them there the astringency gets worse and to a point of no return. Oh and if you did want to reduce the mash temp by a large margin quickly....you could always fill the HE with ice cubes and water.

Thanks all, Now do I make a heat exchanger out of an old 5 litre pan or do I use my HLT? I'm thinking a wide diameter 10mm coil in the lower part of the HLT. I'll then run the cooling water back to the HLT at the end of the brewday to use for cleaning. (previously didn't have a dedicate HLT). Bear ...
