Apart from the boil over a successful brewday! Nice photos. Hi Dave,
I did consider doing that, but if memory serves me correctly, the XB was lighter in colour than the XXX. So I figured I would drop the roasted barley for this brew. It's all experimental at this stage though.

Just bottled this today (after 27 days in FV). I would suggest either a Cooper's Pilsner or European Lager. I believe they come with a true lager yeast as standard. I brewed the European lager last winter. Turned out quite nice, but takes a long time to condition properly.

Looks and sounds delicious! By the way can I ask why you rehydrated the yeast for 24 hours? I thought it was only necessary to rehydrate for about 15 mins before pitching with dried yeast.

Sounds like you made some tasty beer. I like your relaxed, laid back brewday style, unlike my usual headless chicken style, checking temps and SGs, carefully weighing out hops etc.

I've found that S33 attenuates ok but unfortunately is a bit lively in the bottle. so should be poured very carefully. Very neutral and clean yeast, I usually use it for german-style ales, rauch beers etc, not for Belgian beer as the manufacturer recommends. Thanks for the reply. I have searched th...
