So, nigh on two weeks in...krausen hasn't all sunk yet, boosted temp today (water bathed the jerrycan) as haven't got heating control in my makeshift fermentation chamber. Hopefully it'll drop over next day or so and I can get on with the dry hopping. Definitely wants 100g Galaxy, i'm going to see h...

I would also suggest reviewing your doughing in technique, 15 minutes seems like a long time. Should take no more than 5 mins, really.

For me, nothing too extravagant as we want it to be easily reproducible by anyone on the forum. I like the idea of Amber to compliment a pale and crystal grain bill. Real British beer!

I think we can make something a bit more special. Therefore maybe Jim's ESB instead? HELL YES. Let's get some ideas down... I reckon 5.5% ish, pale malt, crystal and some speciality grains to give it character...open to ideas though, haven't made much in this style. Like challenger for hops, maybe ...

Traditional IPA or a Classic British strong bitter would be ideal. Goldings for one of the hops, other suggestions? A good solid British yeast. Luvverly. Grain bill not too complex either, best not to overdo things ;)

Keep an eye on the gravity over the next few days, should be fine. Doubtful it'll ferment much lower than that depending on mash temp, grain bill, fermentation temp etc

To add to my earlier advice; check out this thread . It covers the arcing mentioned by rpt due to lose connection (I had this on my 40l Buffalo too) as well as thermal switches and thermal fuses.
