A length of silicon tubing attached to the tap and long enough to reach the bottom of your pint glass can help reduce foaming. Still have to pour fairly gently and keep the tube on the bottom of the glass till poured, but does help in my experience. Not sure if it would work with a sparkler tap tho...

I've thought about using my fermentation fridge for curing meats and for cheeses. The biggest issue for me is working out how to control relative humidity. I'm sure cleaning and sanitising would deal with any risk of cross contamination

I've made Summer Lightening before, can't remember where I got the recipe but it's not in GW"s European book....at least not in my 1995 edition

How do you pronounce 'Wyeast'? Is it 'double you yeast' or what?
I've only bought it online and read the word, I don't think I have ever had to say it out load but it occurred to me today that I wouldn't know how to.
