Cask isn't very feasible for homebrewers, you are committing to finishing a serious amount of beer in a short period of time.
Totally worth it though if you can pull it off. Event beer and the like

You will get a bit of spicy phenols from saison yeast, adding fresh black pepper, rounds out that peppery ness and gives it more complexity.
You can use this trick with a lot of saisons if you are sparing with the adjuncts and spices.

Makes a good HLT. Boil may not be vigorous enough for some to use as a kettle, and it is just a bit in the small size for a Biab vessel.

But beware of overdoing the elderflower. 200g of flowers (destemmed) in a 25l batch is too much.

Thanks guys. Although the single vessel concept is appealing I am sure there must be downsides otherwise we wouldn't all be filling our sheds with faffy three (or more!) vessel systems!? The mash itself if quite different to the traditional way. Dean. The BIAB brewers have had a lot of stigma throw...

Consider regional differences too, different parts of the country will like their beers more bitter across the road. A Manchester mild could be in south east bitter IBU territory. A higher gravity beer will need enen more IBU to balance the mild ale.

Depends how much sugar you add. The stronger you make it, the lower it will go. You may be able to calculate where it will end up at 100% attenuation.

Now that I remember, I did once buy a cheap stainless steel pot in which to ferment, but wasn't impressed by the finish on the inside. There were lots of little holes where the sides had been welded onto the bottom. It now does fine service as an HLT. If I were going to do it again I'd try to look ...
