It ended up not being too bad a night. Got chatting to the owner, who's a nice bloke and they got presented with an award from CAMRA whilst I was there.

There's a north east homebrew club meet up at the Town Mouse in Newcastle tonight at 7pm.

Where are you based? I have a copper double coiled immersion chiller sitting doing nothing since I got a grainfather. It'll be a pig to post but if you're local (north east uk) we could arrange something.

Assuming you're aiming for 5%ABV, I make that roughly 3% of the grain bill. I reckon that's ample.

Yeah that's loads of carahell. I've used a bit of it in pale ales and saisons to add a touch of malty sweetness, up to 8% I think. Any particular reason you made a starter? From my experience there's no need as rehydrating should be sufficient. I've just recently made a dark hefe and 1.016 is not too high for bottling, especially after 3 days of consistent readings. It's best drank fresh anyway so get the bugger refrigerated as...

I zested and juiced mine. Put the juice in at the end of the boil and put the zest in just enough vodka to cover for a week and lobbed it in with the dry hops (amarillo) for 3-4 days.
