How are you going to bottle? Put the flavouring in the bottling bucket with your priming sugar just before you bottle it and rack the cider off the yeast in the fv in to your bottling bucket.

Newport & Ella Hops

Has anyone used newport or ella hops before. think ella were called stella originally. What flavours do you get from these two?

Was thinking newport for bittering and ella for late additions. Anyone used newport late in the boil though?

I cultured up the yeast from the bottom of a bottle of worthies a few years ago and after 4 or 5 gens it got a really strong cherry flavour and aroma especially on dark ales. More recently I experienced the same thing from wlp013 london ale yeast. For me they are the same yeast!

What yeast are you using faeyd? I've been knocking out the wits this summer. Been using wlp400 and I find if you don't stir the krausen back in then it takes ages to ferment out. Makes a cracking beer tho, nice wit bite and low/no banana clove flavours.

Yes is the simple answer. Cant go wrong with these three really in any combination. Centennial aka super cascade is one of my favourites. Enjoy!

It depends on the rest of the recipe. What type of beer are you trying to make? What malt are you using and what is your target gravity? But generally for a pale ale, I would bitter with northdown or fuggles at 60 mins, then throw the cascade in at flame out.

Try brewing 2 versions of this recipe with and without the amber. It will give you 2 very different beers and will give you a good idea of what amber brings to the party. Wrt the hop ratio I normally use 1.0 for american ipas, but use 0.7 for british bitters or strong ales as they tend to be more ma...

Looks like a nice brew timbo. For my 2p worth l would keep the ibus down to about 40 ish. With all that amber in there it will be undrinkable.
