A winter warmer sounds good. There are lots of dark beers around 5% that could be winter-warmers. I brewed Graham Wheeler's Festival Mild and although mine was only 4.8%, it's a cracking pint. Never brewed it but something along the lines of Theakston's Old Peculiar would also be a good candidate. I...

I know the Hopback brewery used it in some of their recipes. I wrote to them asking for the recipe for their Winter Lightning and they use like a regular crystal malt. I'm late to this discussion but I can definitely confirm that you can use Weyermann's Vienna as a base malt totally 100% of the ingredients.
