I think you'll get a decent amount of flavor withe your schedule. FWH does a good job of establishing a non-harsh bitterness.

I recently bought a small jar of PBW after buying some particularly cruddy cornies as well as thumbing my nose at commercial cleaners for years.
I absolutely love it!

You'll never be able to clean a bottle in a dishwasher.
You can sanitize if you have a "heat dry" feature. That will heat the inside of the dishwasher to a temp that will create steam and sanitize.
I use Starsan myself when bottling.

I'm finishing up a keg of pale dry hopped with Columbus. Never tried it before and its very interesting. Piney, yet fruity.

I use my mash tun to cook steaks if I'm having a get together and can't pinpoint an eating time. Put the vacuum sealed steaks in at "X" temp water to cook them to your desired "doneness". I believe that you can convert any recipe to a late hopping recipe by simply matching the "regular" IBUs with additions starting at 15min remaining.

Pretty much the same as hotmog. You'll know/taste when it's time to do more than rinse with water. Then just pull cleaner through and rinse.

Turn one into a boiler and the other into a giant corny. You'll need a welder. I've seen pictures online somewhere of a 1/2 barrel fitted with a corny lid.

Couple comments: Dogfish has their own strain that they use for their standard lineup of beers. The strain is called "Doggie", I just saw this on the Brewmaster show. Surprisingly, when I asked the brewer (local, see above) what yeast to use other than his own, he recommended WLP005 NOT Wyeast 1187 ...

Fill the hose with water, put a finger over one end and stick the other end in the beer. Hold the closed end over whatever you're going to siphon into and release. Instant transfer. I usually keep two small glasses nearby, one to catch the water and one for a sample.

The breather keeps a blanket of CO2 on top of the beer. The beer engine is pulling the beer out of the corny. No pressure needed on the corny to dispense.
