Cascade is extremely adaptable to literally any Americanized style of beer. Any possible type of beer you wanna drink, just use your Cascade for an American twist.

Good call, that'll be juicy and delish! Mandarina Bavaria blends extremely well with Cascade too, for really well-rounded hop bitterness/flavour/aroma.

The best stouts I've brewed are closely based on old Guinness recipes, around 74% Pale, 16% Flaked Barley, 10% Black Malt, scale that to your desired ABV strength. You could easily turn it into a Milk Stout by adding Lactose, around 4.5% of the overall weight, at the end of the boil.

Sounds like a delicious beer, but I haven't personally had the good fortune to try it. Google Images of it are fairly light orange amber, and you didn't describe a ton of malt complexity or residual sweetness, so I wouldn't overdo the specialty malts. I bet they're all usable, but if you're worried, just boil up some malt extract for a small yeast starter a couple days before your main brew. This is a recommended "best practice" anyway and will always do more help than harm.

Don't worry about hiding what the yeast is doing, Kveik yeast is very domineering, so feel free to be equally bold with your hop var...
