some basic grains - wheat, roast barley.
vac packed hops is the biggest need - doesn't have to be anything too exciting just ekg and a few commonly used varieties.

I would vote for no boil, no campden, no added yeast and don't drink it before next spring.

Don't use a dehumidifier you'll just waste a lot of electricity and won't solve your problem. Your brewing will cause a lot more vapour than any dehumidifier could possibly cope with. Ventilation is the key. I do private housing enforcement for a local authority and I can tell you that dehumidifiers...

I started with kits, then did approx 6 months of extract and then AG. My advice is, forget bottling it's just a pain but you can always bottle a few to keep, swap, give away. Funnily enough I got one off Freecycle as well.
I took mine into Leylan Homebrew and Les kept bringing out second hand lids out until he found one that fit.
I think that he only charged me a couple of quid.
Works fine now.
I put an s20 valve on mine to use with the HB bottle.
