Re: Rhubarb wine recipes?
For 1 gallon; 3lb Rhubarb 3lb Sugar White grape concentrate - optional, but does give a slightly smoother wine. I rarely bother though (+ you'll have to lower the amount of sugar to compensate) Yeast & nutrient Chop the rhubarb into small pieces (don't bother peeling it) Bung it into a (sterilised) ...

Re: Filters
I don't filter, as I have never had any need to filter wine, and I don't use finings either. The only wine that has never cleared was a plum wine, due to a pectin haze but, other than that, they're clear as a bell! Some people also say that filtering wine can strip some of the flavour and aroma from...

Re: Brew Fridge Question
This beer has been priming in the bottle for the last two weeks and, thankfully, there seems to be no off flavours so it must be down to the Irish Moss (as opposed to bacteria). Still, this is the clearest beer I've ever made so I will experiment with putting it in the boil a bit earlier, hopefully ...

Re: Carrot Wine
Glad it's going down well! It will definitely benefit from a good long maturation. The last batch I made was left for nearly two years in the bottle and mellowed nicely

Re: Carrot Wine
My 2014 carrot is the best carrot I've done, but... recent computer crash means I no longer have the exact recipe! That's always the way! The best rhubarb wine I made was also one of my first wines. It was really smooth and full of flavour. I didn't bother keeping recipes then but have a vague reco...

Re: Carrot Wine
I insert a funnel into the demijohn, balance a sieve on top and line the sieve with a mesh bag. It takes a while to strain through but it will remove the bits.

Re: Carrot Wine
Looking good! I thought you'd fallen over due to the fumes from the high alcohol yeast....

Re: Brew Fridge Question
I had a taste yesterday and it all seems to be fine I've moved the FV to a cool place, hopefully it'll be ready for bottling next week.

Re: Brew Fridge Question
Thanks Steve, that's good to know! I'll give it a taste test tomorrow before moving it to a cool place for a few days, just to confirm.
Interesting about Whirfloc and Protofloc as this is the first time I've used Irish Moss in a brew (10 minutes from end of boil).
Cheers,
Mark

Brew Fridge Question
I have recently converted an old fridge into a fermentation cupboard (the fridge part doesn't work so it just heats but can't cool, not really a problem considering where I live!) I have fermented two brews in there, and they seem to take ages to clear. I don't just mean that the beer is hazy, there...

Re: M&S Grape and Raspberry Juice
I have found that since I started making beer regularly (as opposed to the odd kit every now and then in the past), my wine lasts a lot longer and is much better for the wait

Re: M&S Grape and Raspberry Juice
It depends on temperature and which yeast is used. I know someone who has made this recently using Young's Super Wine Yeast, fermented it warm (probably too warm) and it was finished in 2 weeks. Mine has been fermenting with Young's Red wine yeast since 12th of May at 19 degrees c and is showing no ...

Re: Who checks gravity
I always check pre-boil gravity, original gravity and final gravity. I like to know whether or not I'm on target and what strength my beer is.

Re: Carrot Wine
I use wheat from a health food shop (as opposed to crushed wheat from a HB supplier) and soak it overnight in water, drain, and run it through a mincer at the same time as the raisins. To be honest, it's nice with or without wheat
