I've used the same filter for years without a problem. It's an upturned plastic plate with holes drilled in it. Recently the malt seems to have been finer and blocked the last 3 brews. All is normal at the brewery. He obviously has a close eye on F.G. for timing his barrelling and accurate hydrometers with just a 10 point scale. I'm actually quite happy with the beer, just curious. I kind of hope it doesn't change! On the rare occasion that I keep some bottles for long periods.......

That's an acceptable (even a recommended) strategy, but, especially as you seem to be struggling, you could always work backwards, where, if it 'works' for you, when you adjust more than one variable, say, yeast strain and mash temp, you remove one (or even two) and assess what happens. Absolutely. I always chuck some of this in at the end of the boil. I re-pitch a few times and, compared to when I didn't use a nutrient, fermentation starts faster and attenuates sooner. John I agree with that, practise does make it easier. That's a good point too about an efficient coil. Are you using a 3v system? I'm as basic as it gets. HLT and Copper are the same thing. Mash tun is a cool box. Water for the sparge is run from the HLT into an FV so that the early sparge runnings...

Both my mash and boil are 60 mins. I only heat enough water I the HLT for the stage I'm at, then heat again whilst mashing. Sparging is around 30 mins. I start the boil before the full 30 litres is collected. Cooling coil is quite efficient at around 20 mins. I leave it in until after draining. I cl...

I've been thinking of giving it a go. I'm half way there. I weight my grain and fill my water boiler the night before. I agree, McMullan. Sometimes exacting methods can produce great results. The problem I find at homebrew levels is that the small volumes make it hard to adjust things, A KG of hops in the brewery is a small tweak. A few grams at home level coupled with a few minutes on the boil etc makes replication...
