I would just brew with the water you have got to start with, which should brew a decent/drinkable beer. Do you have a way of controlling fermentation temperature? If not, I would focus on getting that right first before worrying about your water. With regard to your water, ph isn't everything and a ...

Your question initially was about hop back vs dry hopping. The 2 are very different. A hopback is used post boil to steep hops before going to the fermenter, at least on a larger brewery scale. I find late hopping (ie at flameout) is similar to the effects that a hopback would give at homebrew level.

There's quite a bit on the internet about "rule of thumb" (eg BYO magazine), however, the one minute is for higher gravity beers and about 30s for lower gravity. I recently invested in the oxyturbo setup, but you want to aim for small bubbles gently breaking the surface, not a "rolling boil"!

Looks OK to me. I wouldn't swirl it around. You risk introducing oxygen. Did you aerate the wort before pitching? If not make sure you give it a good thrash for a couple minutes next time

I don't know what your water profile is, but if your calcium is pretty high anyway just add the salts to the copper (boil). Otherwise add 2/3 to the mash and 1/3 to the boil.

Waaaay too much. Use 1/4 tab. Should help with blocking issues. Pellet hops may also cause blocking.

How much protofloc? you only need 1/4 tablet for a 20 litre brew.
