Re: Leffe Clone - High FG
1016 should be fine for a Leffe Clone because apparently Leffe itself is left a bit high ie sweeter in order to satisfy " the broadest possible audience and finish sweet" (Brew Like a Monk)

Re: Leffe Clone - High FG
I recently did a 1060 belgian ale with T-58, fermented at around 17-19C. 21 days in the FV, no rousing, just patience. Bottled when it hit 1011 (target at 1010). I also find that when I keep it in the FV for 21 instead of 14 days (or when it is finished) it carbonates in 4-5 days.

Re: Piss colour!
You can deepen the colour towards mahogany or deep copper by not drinking any other liquid for a few days except your piss-coloured beer.

Compared to S04 and US05, it was a doddle to clean the FV, the yeast ring came off with the softest sponge.

Re: Lager recipe for the spiedel braumeister
I bought my hydrometer from germany and it reads in degrees Plato.... 9 is 1.036 Any ideas on how to change the process to get a higher reading? That is very strange. With my 20L BM I start with 23-25L of water and 5kg of Pale Ale malt would give me around 1054 OG IIRC (check my website in my detai...

The colour on both of those beers is simply stunning - I can't stop watching that picture. Looking forward to the other two. Thanks!

Re: Nearly ready for first AG brew - Recipe for hoppy brew?
Oh and I would increase the dry hop, I only used 7g because I was using a tea ball and it was all I could cram in! Nice one, I wonder if there are bigger tea balls... I haven't started dry hopping because I haven't found a convenient (to my mind at least) vessel to put the hops in, I guess I will b...

Re: How low can you go!
A daughter, house party, alcohol...oh dear... I think in the latest Northernbrewer video they brewed a "lager" with ale yeast (us05) - fermented cooler than usual...they got a very clean taste. Anyway, if you trust your daughter, aim for 4.1-4.4% and hope for the best...(otherwise, 2% table beer mig...

Re: batch priming with wort
Bumping up an old thread, hopefully it's ok especially with a new Speidel Braumeister thread in a brewday section. Speidel manual instructs to use the speisen method, and in my 12 brews I've always used that method for simplicity. I brew 20-22 litre batches and fill a sanitised 1.5L plastic soda bot...

Re: Speidel Braumeister first attempt
bds, a monster BM thread here with a lot of useful info: http://www.homebrewtalk.com/f14/speidel-braumeister-brewmaster-229225/ (hopefully it is ok to link it here) Couple of points sprang to mind. I bought my 20L unit almost a year ago and around that time Speidel had switched to using metal filter...

Re: Inspired by Orval & Bringing Belgian Brett into my Brewe
In the end I decided not to use Brett since it's my first beer with Belgian yeast so I want to taste that yeast as it is. But good to know I don't have to stress too much about sanitation. After all, I use Orval bottles a lot and just rinse them couple of times and star-san them and still haven't de...

Re: Inspired by Orval & Bringing Belgian Brett into my Brewe
Well done, Steve. Interesting thread. Would it work to just pour in the dregs straight from Orval bottle and not to culture? I usually bottle from the primary - should I pour in the dregs with the yeast, or later at the bottling? Lastly, I use a plastic FV - can I later get rid off the Brett in the ...

Re: Bench Cappers
Cheers Steve. I saw some videos on youtube where the lever is pulled down gently, tried it twice and once it stuck. Looks like I need some vaseline then!

Re: Bench Cappers
Hogarth and Runwell-Steve, I've got the automatic version too. What's your technique? I find that with the 26mm head, it gets stuck when I bang the lever down, then the parts fly all over the place, spring etc. The 29mm works better and doesn't get stuck. I was told to adjust the height by putting i...
