alix, 10bbl is commercially viable, apparently many people who start with only a couple of barrels say if there's one thing they'd do differently they'd start bigger because after even a few months one had to expand, or brew 24/7.

Good points. I am serious in a sense that I am not escaping or leaving behind another job at all, so it's all from fresh so there is no opportunity cost as regards to leaving a paying job. To get into distribution it would be better to start brewing on contract basis. This will give you the most valuable experience. I was using crystal malt that I bought almost four years ago. Stored in a dry and cool rodent-free environment. No problems.

I started mashing with 26L, sparged with 6-8L, after sparging when the boil started I usually had around 29-30L, ended up bottling around 22.5-23L but 2L on top of that is definitely possible with some adjustments ie adding more water to the sparge or boil.

Those numbers look dodgy. Sean Terrill's algorithm is apparently the best and using it 12.5 equals 1.048 and 6.5 equals 1.012, which then gives about 4.7% abv.
