Re: Geordie Yorkshire Bitter Tweak
Sounds like it wont hurt to condition it a little more in the bottle - my BrewBuddy Bitter is now 12 weeks old and none the worse for it :) Remember that the charcheristics like "biscuit" etc come from the grain bill used for the mash - if they didnt use the same grains then the flavours wont compar...

Should you want to scale up, 23l = 40 pints so somewhere between 40 and 60ml of extract should work perfectly in a batch

Shouldnt think such a tiny quantity would casue you issues - perhaps it could increase the time needed for decent fermentation to start

1.008 sounds pretty much finished to me - you need to have 48 hours with a steady hydrometer reading, then Keg. Add your priming sugar and leave it in your 15 deg hidey-hole for about a week to get pressure on the keg, then move to the garage to condition for a few weeks

Re: Turbo Cider Recipes, Methods and Taste Collection.
The solids should drop as its the CO2 produced by fermentation that keeps it aloft - might need to give the vessel a gentle tap to dislodge any trapped gas and it'll all sink nicely at the end of fermentation. Personally I prefer a solid FG reading over guesswok tho - although if you let it go for 1...

A good heaped 'n' a half teaspoonfull should do for 12l - mix it in gentle and if you have an airing cupboard, move the mix in there to see if the warm gets her moving again.
If you dont see a move in SG in the next 24-36 hours then I'd consider a repitch
