If the wine is going to be drank fairly soon, you'll probably be ok if you leave the sulphite out. For long term storage though, & to prevent possible re-fermentation & to help preserve the wine, use the sulphite/stabiliser sachets that came in your kit.

I use a whizz stick to de-gas my wines, I attach it to my drill.

Therefore, the answer to your question is yes, provided your stirrer is food grade.

Your best bet may be to start your kit the day before you go back to work, & it should be fermented when you start your 2 weeks off. Then you've got plenty of time to rack, fine, bottle, etc.

You're not the first, and won't be the last to do this, including me. Don't worry about it, no harm will come to your brew & it should clear up unaided without problem.

It depends on the kit. Some state that you should wait till the fermentation is fully complete, & others, ie selection estate, say you should rack it at gravity 1010 & let it ferment out. Same here. The filter pad does seem to collect a little "debris", ie fine oak chip particles, & I haven't noticed any stripping of the flavour.

I use one of these for my shrink caps Jim. I dunk them in a pan of hot/boiling water & it's quick work.
