Anyone have a solution for this ? I've used Whitelabs, Brewlabs and the real deal cultured from Bengal Lancer, all have become over-carbonated in the bottle. I love the character I get from this yeast, but unless I can find an answer to this problem I'll be keeping it for the beers I put into a bar...

Beer clears slowly from the top and yeast drops to the bottom. Transferring to a secondary causes this to happen twice. If you then fine the secondary it further clears the beer. Can someone explain the basic procedure for Top cropping Has the yeast got to be used straight away? Do you make a starter with it or just toss it into a new batch? Use the method that I have outlined in this thread and you can save the yeast for at least a year. I have reused yeast two years later...

Looking at your original post it reads as if you are only using a Starsan equivalent sanitiser. If your infection is caused by a wild yeast this could be the problem because Starsan only kills bacteria not yeasts. Might be time to use something that does. MM does a very good chlorine based sanitise...
