That's about 80% apparent attenuation so we can safely rule out windsor :)

Blond ale type thing?

100% lager malt, one 15m big hop addition for a nice hoppy flavour beer or the standard 60m bitter addition then some late additions. Use something like s05 for yeast

US-05 takes ages for the krausen to drop for me - it finishes fermenting easily enough but the yeast seems to like hanging around. I'm never in a rush to bottle though, so I just let it drop of its own accord.

Mild is the best type of beer I've had with curry to date imo. And I eat and cook a lot of curry

I would, two is only 900g of LME which is why I added more sugar, otherwise you'll end up with a weak stout unless you brew it pretty short.

I use two jars in my recent brew, a coopers stout. It came out really fruity/cola tasting but I also added 450g of dark invert sugar made from demerara sugar, so it could also have been that :o .

it's a nice pint.

I love WLP530, gives a wonderful spicy flavour and it smells amazing when fermenting. You will need a blowoff hose, first time I used it on a reasonable sized beer I lost about 1/4 of the batch of beer due to blowoff.
