We use the glass carboy's here in the US. Plastic can acquire hard to clean scratches. As for a conical, I've read that the shoulders of the carboy aren't steep enough for the yeast to slide down for proper dumping.

If you're looking for a darker color from a single malt then you might want to start your boil while you are running off the mash. This will slightly carmelize things. Last months BYO magazine had a home made Burton Union. Didn't look too hard to recreate. My copy is packed away in storage until I move. Maybe someone else can dig it up.

Hello all, I'm dutifully reading all of the messages here as I have time and was wondering about the recommended boil and mash times. It appears as though most of the times are 90 minutes.
