Another TC question!

My first two attempts at TC have quietened down considerably and I am planning to transfer to a secondary demijohn on Saturday (two weeks after initial fermentation), how long should I leave it in secondary and when should I bottle it?

My air stone sometimes does the same thing, but I have found that this is usually due to air escaping around the end of the hose, it may work if you push the airstone down into the tubing.

I have two gallons on the go aswell, had a look around my local Co-op and saw some apple and blackcurrant juice, trying that one on Saturday (my Dad always said that those old demijohns would come in useful).

I use plastic kegs for serving weaker beers and glass bottles for my stronger ones. Works well for me, wouldn't mind getting a few cornies though.

Why are you shouting :wink: . I always remember back in the day when I had a Woodforde Nog Ale, I didn't realise that you didn't need to add sugar to the wort, I used 1kg of a dark sugar (can't remember what it was now) and the beer turned out to be excellent, tasted a lot like a imperial stout that...

Proper Bo! Glad to see that you enjoyed it! I found that cooling down the hot wort before you add it to the main batch of water gives a better result, put the pot of hot wort in the sink and fill water up around it, that should soon cool it down then add it to the water.

My sentiments entirely. I still think you need to compensate for the thicker mash when brewing at home ; but perhaps only up to 90 minutes, but that's quite independent of what the old brewers did - I think their mashes were less thick and they boiled longer, and of course made a second and third b...
