Believe me, when I brew I prefer the British malts however if you are looking to copy 2 Hearted then with the Maris Otter you will not have the correct flavour profile. Still a good beer I am sure but not the same.

I think that you should consider trying lager malt rather than the Maris Otter as Bells is only using 2 Row malt anyway.

My suspicion is that you do not have a tight FV and the CO2 is escaping. Did you take a hydrometer reading for your OG?

The reasons for the difference in head are simple: Traditional Belgian beers are generally primed to between 3 and 4 volumes of CO2 - very high - and they also will tend to use a high amounts of foam positive adjuncts such as wheat. Traditional British beer will end up with roughly 1.2-1.8 volumes ...

Sounds as though the recipe was a success Do you bottle all of your brews or do you keg some? I keg most of what I brew these days although I do not force carbonate.
