If your using fresh flowers watch out for the ones that smell like a cats urinated on them. You think you’ve found the best tree then it smells (and tastes) god awful.

I wonder if it is your perception that has changed now that your pallet has more experience?
I know it happens with hops so why not malt. Alternatively your first beers were less hoppy and more malt driven and now your utilisation is better the malt takes more of a back seat?

King keg pressure vavle
I am having a load of trouble with my kegs. After failing to seal when conditioning I gave it a charge of co2. I am using bulbs so little control and blew the pressure valve. Problem is now its not holding thr pressure and is leaking through the rubber grommet. How do I stop this happening? Cheers W...

And another thing...
If you only have cookers and eaters and the acid is huge. Say above 1% total acid then wild ferment, bottle then leave for a year. Time will drop the acid if you have the patience!

An alternative is a blast from a camden tablet if you are going to dry hop it, soak in a little beer with half a tablet for 24 hours before adding it to the bulk.

It was based in th young no1 durden park book recipe and called for a bit of caramelisation in the kettle with a long boil
