I've used 3 packets of nottingham for a 13% stout without any issues. Fermented well with no off flavours. Make sure you have some oxygen in there as well and you should be good to go. Personally I've found the AB series that I've tried to be heavy on the oxidised flavours.(15-18) but an interesting...

I am assuming that I will also need a probe but pt100 or NTC?

Would I be able to detach the probe from the thermowell/ pan for storage?

Sounds great but unfortunately I have very basic electrical knowledge. In very beginner term that means...?
I don’t have an inkbird yet as I was going to buy for the job ( which is likely to be repeated) so can buy as appropriate ( whatever that may be)

Ok so I’m being pushed out of the house for brewing and need an extension cable that can take it. I’ve got a boiler with 2 x2.5kw elements and tried it outside with my normal b&q extension coil. Ive been given some honey comb and would like guidance how to get it out. There seems to be everything from a cold soak hot soak to fermenting with the comb in so not sure what the best approach is. Would like to shoot for a plain dry mead of around 10% if possible.

Would love too Eric but alas I’ve got 2 kids to deal with instead. Using about 60-80g of hops each brew so not excessive and has only started since putting the elements in the pan
