fermentability of maize

Post by delboy » Fri Feb 29, 2008 11:54 am

Does anyone know what the fermentability of the maize is when used in a mash is it the same as barley ie about 80 % or much closer to sugars ie 100 %.

I guess im asking does it leave any any residual branched sugars at all or is it completely fermentable?
