I'll be brewing a Mild later this year and notice that there is a malt available called Mild Ale Malt.
As it stands the recipe I've put together is:
80% Pale Malt
5% Demerara Sugar
5% Crystal Malt
5% Chocolate Malt
3% Torrified Wheat
2% Black Malt
Could I use 80% Mild Ale malt instead of Pale Malt? If not what percentage should the blend be between Pale and Mild?

You can indeed, and it makes a nice result . . . you do need to be careful with the adjuncts though as it is not as good as converting them in the mash as pale . . . but you shouldn't have anything to worry about with that recipe.
FWIW, I normally use 50% (ish) Pale, and a mixture (50:50) of Munich and Mild. The Munich really adds a nice sweetness that I find you don't get with Mild malt on its own . . . . If it were me I'd drop that Black malt completely though . . .The crystal and Chocolate will provide more than enough colour . . . also consider using the light versions of crystal and chocolate, there is a very subtle difference in flavour that really shines in a mild.

I would up the Chocolate, by 20% ish , but keep the crystal the same . . . I rarely use crystal for colouring though, but as a flavour, and then I want to ensure that it's not too in your face.iowalad wrote:Aleman,
