Pale Malt, does it make a difference which one?

Having just purchased another bag of Marris Otter I just wondered if Its worth trying other pale malts and if anyone has any other preferences to MO?

I know there was a talk on malts at the Derby do, which I missed but I'm wondering if anyone has used other pale malts and have preferred them over MO and why?

I think there is much more of a difference between maltsters as there is between varieties. I've used Muntons and Fawcetts (Both Drum Malted), and Warminster (Floor Malted) and much prefer the Warminster . . . I guess those with a 'educated' palate could report differences between the varieties, but sometimes I doubt it

I kind of alternate between Perle and Maris Otter.
I'm not great at appreciating the differences but I find Perle to be perhaps a little sweeter. Kind of like partway between Maris Otter and Golden Promise. It's a very good base malt anyway.
When I first went AG my supplier was all out of MO so I used that and it works well.
Very good in US styles as well as English.
Golden Promise I find to be definitely a sweeter base malt but I haven't used it extensively.

When it comes right down to it I do kind of agree on the Maris Otter statement above...

I've used GP once and got a stuck mash. It did taste slightly sweeter and iirc the krausen was even more wierd looking than normal. :roll:

I think you also need to consider what types of beers you brew. For pretty much all British styles I consider Maris Otter to be number one choice. But I also like to brew continental and North American-style beers and for these I feel that maris otter has too dominant a flavour. For example, I brewed a lager using MO as the base and it had a distinctly grainy flavour that was not entirely pleasant.

So what would you use as a American 2-row replacement? Lager malt?

Yeah absolutely, Steve. I've tried both pilsener malt and British Lager malt. I generally lean toward the british lager malt simply because it's a bit cheaper.

Can I substitute Pearl for MO on a 1:1 basis, i.e. does it have the same gravity potential? Have some pearl to use up (well macleanb does and I might have it off him) rather than let that sit there festering and go and buy more MO.

You should get the same extract from all pale malts: 300 litre degrees per kg at lab efficiency if I remember rightly.

You do get different flavours though, and I use MO where possible.

On a recent post about a recipe from BYORAAH, I posed the can I substitute the pale malt question and from Graham himself the answer was : Sure

A bit more than 1 word of course...
