Toasted / Roasted Oatmeal?

Post by WishboneBrewery » Sun Sep 27, 2009 5:48 pm

After a little reading about Oatmeal stouts viewtopic.php?f=24&t=7056 & viewtopic.php?f=24&t=11287
I suppose the colour of the Oatmeal only wants to be a light tan colour, how far can you take it?
I've just done a little experiment with a couple of tablespoons full of Oatmeal and Dry frying them, I took the colour to a kind of shredded light tree bark colour (kind of a dirty light to mid brown).
These taste pretty nice, I was wondering if you could roast them further and if anyone has used roasted oatmeal for some of the colour as well as flavour and mouthfeel in a stout???

I was just reading/listening to Jamil Z. talk about this in relation Oatmeal Stout. (Not sure if it was the podcast or a BYO article.) He was talking about how just using flaked oats didn't really impart much oatmeal flavor to the beer. He did talk about toasting it in the oven as you describe to get more flavor out of it.

Ultimately, I think he also recommended throwing in some Victory Malt to get that toasty flavor.

I see that Victory Malt is something similar to Amber Malt here in the UK.

I'll see if anyone else has any further info on roasting oatmeal. :)
