Pale malt ? ( Maris otter? Golden Promise? optic? )

Post by fisherman » Fri Nov 05, 2010 1:42 pm

Hello lads,
I have been mashing for years but I have used maris otter only. Is there much diference between pale malts, I buy in 25 kg sacks . I like light coloured bitters such as exmoor gold using pale malt liqour hops and yeast only , no roasted malt, I am waiting for a pale malt plus munich malt on a 3 to 1 ratio to matureI did my 300th AG this morning, to early to celebrate maybe later. I have thought of ordering 5 kg of each of these pale malts when I order my next sack of otter to try them. Please advise on your opinion on these pale malts compared to maris otter
Cheers

I can't profess to be an authority because whenever I find a malt I don't like I don't use it again - but I do like to play around with malts in pale beers. Different pale malts do have different flavours and the more modern ones seem to have hight extract rates. If you want to brew blonde beers munich and vienna add a more yellow note and have good flavour. You can get all of these in 3kg bags - why not give that a go?
halycon certainly brews out stronger than Mo, I find its flavour blander. I've used it a couple of times and don't care for it,.
Golden promise I don't recall as being any different in colour, my stock brew came out weaker leading me to suppose the extraction is lower, flavour was stronger than MO more akin to mild malt
Mild Ale malt is interesting as a bitter/light mild, I find it has a good malty flavour, possibly drier than MO
Munich/Vienna in 500-1kg additions introduce a slightly golden hue to a pale bitter and enhance the malt flavour. But when brewed entirely with these that maltiness doesn't seem any stronger. They produce lovely golden ales and lagers.

I've used Marris otter, Pearl, Golden promise and Optic, My favourite for stouts is MO, I love GP in Black Sheep type beers and the Pearl was nice in light beers.
The only problem I found was that Pearl was harder to get a clear run from the mash tun..... Should be better for me now though since building an HERMS.
Oh, Optic was nice too, but TBH not much difference in any of them.

There is some difference in base malts, but I would go with which one has the best cost.
I'm just here for the beer.

I found more variation in different maltsters' Maris Otter, try Thomas Fawcetts MO for example, it is much fuller and maltier than other MOs i've had.

Thanks lads great advice,
For some unknown reason I have gone off crystal and darker malts they seem to strong in flavour maybe I am drinking them to early. I seem to favour Munich and Caramalt and a mix of Maris otter with mild ale malt at a ratio of 3 to 1. My next mash will be 2.5kg M/O 1kg Mild malt 500grm Munich and 400 grm Wheat malt.Should be mellow with fuggles to 25 EBU. I think I will be happy with Maris Otter what a great hobby loads of fun mashing sparging boiling fermenting and DRINKING.DRINKING HIC
cheers

Well i used MO for along time however i have found personally that optic has better efficiency than MO and caus the flavour diffrence is so sliet i use alot of Optic instead.I also use alot of mild ale malt i use this in some of my stouts or any of my malty ales, mild ale malt has a higher enzyme than MO wich means you can use alot of diffrent adjuncts and malts that you find in milds, stouts ect.So what i would say if you want to stick to tradtional malts and you want a slietly better flavour go with MO but if you want a better efficiency in your brews i would say use the modern malts Optic Halacon ect.
