Steeping Grains in Kit Brew

I thought posting this query here might get a few more replies than in the Kit forum.

I recently did an English Bitter kit and steeped 250g medium crystal in it, unlike the first time I did this kit. I couldn't believe how much complexity and "fresh" flavour it has given the kit. I'm hooked. So, I'm looking for two things:

1. What other grains can I steep with my kit brews?
2. The crystal malt gives a caramel/slightly chocolatey flavour. Which steeping grain would give a more neutral flavour, i.e. less caramel more fresh grain flavour.

I suggest that you do a "mini mash" with some biscuit malt that will lend a nice flavour to your brew. Mind you, that's a mash not a steep.
