Weyermann Bohemian Pilsner Malt

I'm thinking of buying a sack of this malt, does it need a stepped mash?, is it any better than using MO.?

I just got back from 'The Weyermann Malt Masterclass' given by Thomas Kraus-Weyermann.
(The talk was about 1 to 1.5 hours, and I was drinking beer at the same time, but in terms of the Bo-pils malt this is what I remember).
The Floor-Malted Bohemian Pilsner Malt (is made in a new/special/different facility and with special barley) and it really needs to be step mashed to get the most out of it.
The Bohemian Pilsner Malt (which is made from a special 'traditional' barley called Hanka) is also good when it's step mashed.
One suggestion for stepping when making a Pils was this recipe from their website.

I'm drinking a beer I made with it using just a single infusion... it is very nice but does have significant chill haze. I like it, may try a step mash next time. However, no problems with a single infusion - just use finings if you're worried about haze. Rob at Malt Miller stocks it, possibly the only UK supplier?

Not from Weyermann direct, however, I have had significant feedback from customers, most who have used it with just a single infusion mash. Most have reported good flavour profile and no haze issues. That being said I do rate Mysterio's opinion highly and he did have haze . I guess the short answer is yes, you will make great beer with a single infusion but possibly a better one with a decoction.

Just picked up a fresh batch today as well!

Thanks for the info.

I've used it in a Wit (no problems of course) and a Hopback Summer Lightning clone (50% of malt, bal MO).
HSL's taken 7 weeks to clear in barrel but I think that's down to problem with yeast I used (possible minor wild yeast infection)

I assume step mashing is to fully modify proteins to reduce protein haze and get good head retention?

Will using protofloc in boil remove all protein haze or does it still remain?
If it remains, will haze show up at say 13C (barrel dispense temp) or only appear as a chill haze?

Sounds like its time to experiment with step mashing!

I should say I get chill haze with all the Weyermann malts single infuse but it's not a problem, it drops away in the fridge after a few weeks lagering.
