Hi there, i recently used this malt for 5% of my grain bill (80% MO, 15% Munich 6L, 5% Melanoidin) and it gave the beer a very distinct taste that is almost caramel/toffee like that may be mistaken for diacetyl, which is impossible given i pitch the right amount of yeast and did a D.rest with wlp001 which never produce any diacetyl from all my experiences with it.
Anyone also have such experience with this malt? I dont think I will look forward to use it again, and will keep it to 2-3% if i do eventually use it. In fact, how can anyone use this to reproduce decoction mashing?
Melanoidin Malt
Odp: Melanoidin Malt
This is a myth anything can simulate proper decoction.
Sometimes melano is right, some people find it pleasant. It all goes down to personal taste.

Re: Melanoidin Malt
My UK Cascade brew has 5% in it and I thought there was something wrong with it, there still maybe, but it could be the Melanoidin Malt. time will tell.
