I guess this is a mystery.
I'm going to make up the following recipe tomorrow and then we'll see.
21L of bitter
2.7 kg Maris Otter Liquid extract
.45 kg Carastan Malt
Challenger for bittering
15g of Fuggles at 30 minutes and 5 minutes
OG 1.042
30 IBUs
I'll dose it with the fat slurry of WL 002 I've got...it's be ready to drink in 4 days, probably!

I'm after a caramel/toffee taste to reproduce a beer that I tried in a beer festival once, so if this does it, I'll get some to try in my next brew.

The beer turned out nice, but I don't think I would describe the flavor as caramel/toffee. I used 3/4 pound in 5 (US) gallons and it is a very light flavor, somewhat sweet. It reminds me a bit of the flavor that comes from honey malt. The resultant brew tastes similar to the Boddington's we get in cans over here. My wife, therefore, loves it.
For me, I prefer a deeper flavor, and more toffee-ish, which I think comes from darker crystal (~60-120L). If you're looking for caramel/toffee, I'd go with a darker crystal.

I saw this mentioned in another thread and so I tried this with my latest batch (and thought I'd over done the boiling) but it doesn't seem to have worked - maybe I should have held out a bit longer..?RabMaxwell wrote:timmydog -The way i get good Toffee / Caramel flavours is by taking some of the first runnings from the mash -tun & boiling the crap out of it reduce by at least half then add back to the main boiler lovely
