Acid Malt

Hi everyone!

Going to brew my first ag lager over the weekend (Pilsner Urquell Clone) and am intending on using acid malt to get the goods down to the correct mash PH.

One question though...having never used it before I'm not exactly sure how much to use?? I am going to use brupaks CRS (like I normally do) to make the water softer, but was wondering can I add a little at a time until the correct mash PH is achieved or is there a general rule of thumb??

I haven't used it but your suggestion makes sense to me.

i did a pilsner urquell clone and didnt worry about it.
just 5kg of pilsner/lager malt in the MT
and mine was great :pink and its not just me saying it other ppl thought so too

Where are you from deadlydes?

My water area is pretty hard which isn't the best for lager brewing, if you come from a softer water area then it's ideal :D

If it get's too complicated, I might just end up ditching the stuff and treat the water as I usually do!!

The only time I used Acid Malt was for a Guinness clone. The recipe called for an optional 3oz, just to add a slight sourness. I did and it tasted real good. Perhaps something similair might do for a Pilsener?

moorsd - do you have a water analysis report for your area and if so have you seen the Brupaks crib sheet giving info on how to calculate CRS quantities to achieve optimum results for specific beer styles ?

Hi Andy!

Yeh I use this when I brew bitters, the CaCO3 level is 260p.p.m in my water area and from memory...I think I've got to aim for around 30 for a Lager?

I wanted to use Acid malt to lower the mash PH as I've read somewhere it gives a softer palette than using DLS or Gypsum? Just thought it might be worth experimenting with since I've never used it before :D

The main sticking point is knowing how much acid malt to use, as I don't want to add too much and the PH goes too low :(

Thanks DAAB, think I'll add around 5% and see what kind of level that gives me, and I'll just add a little extra if needed.

Got the yeast starter under way yesterday in preparation for brewing tomorrow!!
