Flaked Maize

What does flaked maize add to the brew? I had to used some for a Durden Park Barley Wine recipe I brewed a while back and was wondering what to do with the rest of the packet.

My next brew is a lager style ale with Lager Malt, Hallertauer hops and US-05 yeast. Would the flaked maize be any good in a lighter style beer?

mainly strength but its supposed to impart a "corny" taste which to be honest Ive never noticed. It may show up more in a lighter beer though as ive only used it in strong bitters.

I may leave it out then and just go for the lager malt. No point using it just to save binning it and ending up with a not so nice beer!

Shame all these little bits of malts that get binned because we'll never use them before their best date. No doubt someone will be buying a 500g packet of Flaked Maize right now for the sake of only ever using maybe 200g of it! We should set up a 'donate your unwanted goods to a brewer in need' system! Guess the postage will be more than buying a fresh pack though.

I'm using it (20% of grist) to do a brew like the one you describe.

it lightens body and colour and yes, a delicate corn taste may be apparent.

I have about 200g of it left, guess using it with 5kg of lager malt isnt going to make that big an impact on the brew in general.

I can't wait to come to the end of my grain cupboard and be able to get a grist out of whats left. As long as it's usuable why not use it? And who's to say you shouldn't anyway? 8)

I use flaked maize quite a lot as it is a direct replacement for the maltose syrup advocated in a few of Wheeler's recipes- and jolly good they are too! It definitely adds a taste to the to the Fullers London Pride for instance that is almost indefinable -but a parallel brew, without the maize just doesn't taste like London Pride. Certainly maize will add to your recipe rather than ruin it. Go for it and good luck.

Just add to your mash- usually about 300 to 500 grams for a 5 gallon batch.
