Lager Malt for Wheat Malt

Post by Kristoff » Thu Nov 27, 2008 12:48 pm

Hi, could I swap wheat malt for lager malt, in a recipe, and still achieve the same kind of taste?
Or are they completely different grains?
I'm hoping to brew a
Hefeweizen
Leffe Clone
Hoegaarden Clone
(not at the same time)
I thought i'd ask, as I can get my hands on some Lager malt, and not wheat malt :)

There is quite a bit of difference between lager and wheat malt (wheat malt in high proportions gives you an unmistakable crispness) and to be honest you can't really brew Hoegarden or a proper hefe weizen without it. The leffe clone is do-able though.
You could certainly do a pale ale with hefe ie yeast still in suspension, just use one of the hefe yeasts and use a similar hop schedule to a typical hefe (low ibus 10 or so and no finsihing hops).

If it was me though i'd just brew some pale ales and give the hoegarden and hefe weizen a miss until you lay your hands on some wheat malt.

They're rather different so I'd say no - especially in the wheat beers. Leffe doesn't have wheat in it AFAIK
