Chocolate malt
I want to brew a recipe that includes chocolate malt but i havn't any. Can i substitute a percentage of black malt instead or does the chocolate malt add something other than just colour.

They're different beasts flavour-wise. I'm no authority, check out brupaks grain guide for a bit of info.

The two are not equivalent. Choc contributes less colour but more flavour than Black. But if the quantity in the recipe is small you might want to try replacing the Choc with about half that quantity of Black. Assuming you only need an ounce or two of Black then the beer should still be a good 'un (but not quite the same as you planned).

Thanks for the replies chaps. Chocolate is only about 100gs out of of 4Kgs but for what it costs i think i'll pop along to my LHBS and get the right stuff. I was being lazy.

2.5% of chocolate is in that recipe for it's flavour, not for colouring.

Its easy to make, just roast some whole pale malt in the oven for about 90 min at around 170 deg C I think, I made some ages ago and it worked out great, ensure you let a few kitchen windows open.

I tried a brew with some chocolate malt the other week and its flavour really seemed to overpower everything else. My first brew was the same minus the choc malt and when i tasted the wort it was deliciously sweet and malty, but with choc malt it was very very bitter and not nice tasting. Wondering if i put too much in and ruined the whole batch!

I think the amber malt would be the culprit rather than the chocolate. Should still taste sweet though...

Yes you may be right there, I have not really given the amber malt much thought. had a quick taster from the keg and it is quite bitter tasting with a light coffee/stouty aftertaste.

I have found that the crystal from Tuckers offers a chocolate malt hint. Although in truth chocolate malt is a flavour that really only comes from chocolate malt. Black is a totally different flavour, and if used in the same quantities as chocolate it will be a totally different beast and in truth not a balanced beers.

Anyone out there ever use chocolate wheat malt? I bought a pound of it recently and will use it in a brown ale or porter later in the year (maybe a barlywine).

What other malts would give chocolatey flavours? I was drinking a chocolatey dark lager the other day and I'm pretty sure the brewery only uses German malt.

Amber Malt in larger quantities gives a flavour similar to chocolate malt but I'm not sure you'd find it in a German beer.
