Carafa III replacement?

Carafa III replacement?

Morning, i'm planning on doing a four shades of stout;

3.50 kg Pale Malt, Maris Otter
0.50 kg Barley, Flaked
0.30 kg Amber Malt
0.30 kg Chocolate Malt
0.25 kg Carafa III
0.25 kg Roasted Barley
41.00 gm Cascade

but haven't got any Carafa III, are there any suitable replacements.
Or is it a crucial element that make the 4 shades stout such a hit? :wink:
I don't really want to have to pay for postage just to buy 1kg of grain :(
I've got black malt and caramalt, would either of those do?

Oh, i got excited then, I thought someone had the answer :lol:

I've been looking and have found this by Garth re. 4 shades..

the stuff in the recipe is Carafa III, it is the darkest of the three at 1200 EBC, it is like Roast Barley but has no husks therefore giving a very smooth taste

if you haven't got any just omit it, the recipe is from AussieHomebrewer, one of their members is on here Craphaus, I believe he originally did a 3 Shades of Stout recipe without any Carafa III.


So i'll probably just leave it out :D

You could do a cold steep with roast barley which is supposed to give a similar result to using the dehusked carafa malts, I think aleman has a protocol for this, from memory though its something like 3 times the amount of malt required for the recipe left overnight in cold water.
Hopefully somebody thats used the technique will come along and clarify this though.

I had no Carafa III when I did my version, so I bunged in 250g of Melanoidin malt....just because i had it.

The brew came out great...but i don't know what effect the melanoidin had on the flavour!

My 4 shades is in secondary fermentation and looks , smells and tastes really promising - planning to have 25 lt in keg under n2/co2 and 25 lt bottled in about 3 weeks.

My FSSs in the Cornie now after 10 days in the FV

Tastes lovely already, I just hope that the taste does not disappear over time like some other brew I have done!
