I have always been supplied with flakes like small cornflakes and used them like that, I've got some from a different source and they are ground much finer than I would like to use, like sharp sand
In the past I always used flaked maize which came as actual flakes but the last lot I got had more of a coarse powdery character. I brewed two days ago with 1/2 kilo in the mash and had no problems sparging. Looks like a promising brew.

I think that the stuff that you are describing as being like sharp sand is maize meal. Technicaly this is just roughly ground corn and is uncooked
Flaked maize is, I believe, cooked and passed through rollers to "flake" it
After saying that, I have used both with good results
Yes i know the stuff the last batch of flaked maize i got from Hop & Grape before i started buying 25 kg sacks was ground to a powder. I got a stuck mash with it the second time i used it i made sure i put it in last on top of the grain. If you use pumps in your brewing setup & put it in first it goes to the bottom then your pump sucks it in causing problems
