Hi All,
Been planning this for a while but still confused... I want to use dark crystal malt in a beer because I am looking for a half way house between crystal and the usual suspects (chocolate, black, roasted B). Bit unsure how to use it though. Is it in place of 'normal' crystal or as well as 'normal' crystal? I thought about just substituting the dark crystal for the other darker malts in a recipe to get a direct comparison but then don't want something too sweet...
Came up with, for 5 gallon...
3750g Pale Malt
250g Crystal Malt
250g Dark Crystal Malt...
Hops to about 25 IBU.
Am I going to get the darker character coming through without too much sweetness? Thanks in advance!

I would just use the dark crystal in place of the normal crystal. It does give a good flavour but I think using both would be overkill (although it may just work).

Actually dark crystal works well in combo with the paler grades for a nice depth of caramel malt flavours. Particularly caramalt and maybe caragold.
